Recipe of the Day:  Grilled Pork Chops

Grilled Pork Chops with Apple-Mango Chutney

Ingredients

For the Pork Chops:

  • ¼ cup olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp apple juice
  • 2 tbsp fresh parsley, chopped (plus extra for garnish)
  • 1 tsp lemon zest + 1 tbsp lemon juice (about ½ lemon)
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 garlic cloves, minced
  • 4 thick-cut pork chops (bone-in or boneless)

For the Apple-Mango Chutney:

  • 1 tbsp olive oil
  • ½ Vidalia onion, diced
  • 1 ½ cups fresh or frozen mango chunks
  • 2 tbsp apple juice
  • 1 piece lemon peel + 1 tbsp lemon juice (about ½ lemon)
  • 1 tbsp sugar
  • ½ tsp ground cumin
  • 2 apples (Gala or Pink Lady), peeled, cored, and chopped
  • 1 cinnamon stick

Directions

  1. Marinate the Pork Chops
    • In a medium bowl, whisk together olive oil, Dijon mustard, apple juice, parsley, lemon zest and juice, salt, pepper, and garlic.
    • Place pork chops in a baking dish or large resealable bag. Pour marinade over them and let sit at room temperature for at least 1 hour, or refrigerate up to 8 hours.
  2. Make the Chutney
    • Heat olive oil in a medium saucepan over medium-high. Add onion and cook until softened, 2–3 minutes.
    • Stir in mango, apple juice, lemon peel and juice, sugar, cumin, apples, and cinnamon stick.
    • Cook over medium heat, stirring often, until the mixture thickens and reduces, about 15–20 minutes.
    • Remove lemon peel and cinnamon stick before serving. (Chutney can be stored in an airtight container for up to a week.)
  3. Grill the Pork Chops
    • Preheat an indoor grill pan to medium heat.
    • Grill pork chops 4–5 minutes per side, or until an instant-read thermometer reads 145°F at the thickest part.
    • Rest chops for 5 minutes before serving.
  4. Serve
    • Top pork chops with apple-mango chutney and garnish with fresh parsley.
