Recipe of the Day: Grilled Pork Chops

Grilled Pork Chops with Apple-Mango Chutney
Ingredients
For the Pork Chops:
- ¼ cup olive oil
- 2 tbsp Dijon mustard
- 2 tbsp apple juice
- 2 tbsp fresh parsley, chopped (plus extra for garnish)
- 1 tsp lemon zest + 1 tbsp lemon juice (about ½ lemon)
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 garlic cloves, minced
- 4 thick-cut pork chops (bone-in or boneless)
For the Apple-Mango Chutney:
- 1 tbsp olive oil
- ½ Vidalia onion, diced
- 1 ½ cups fresh or frozen mango chunks
- 2 tbsp apple juice
- 1 piece lemon peel + 1 tbsp lemon juice (about ½ lemon)
- 1 tbsp sugar
- ½ tsp ground cumin
- 2 apples (Gala or Pink Lady), peeled, cored, and chopped
- 1 cinnamon stick
Directions
- Marinate the Pork Chops
- In a medium bowl, whisk together olive oil, Dijon mustard, apple juice, parsley, lemon zest and juice, salt, pepper, and garlic.
- Place pork chops in a baking dish or large resealable bag. Pour marinade over them and let sit at room temperature for at least 1 hour, or refrigerate up to 8 hours.
- Make the Chutney
- Heat olive oil in a medium saucepan over medium-high. Add onion and cook until softened, 2–3 minutes.
- Stir in mango, apple juice, lemon peel and juice, sugar, cumin, apples, and cinnamon stick.
- Cook over medium heat, stirring often, until the mixture thickens and reduces, about 15–20 minutes.
- Remove lemon peel and cinnamon stick before serving. (Chutney can be stored in an airtight container for up to a week.)
- Grill the Pork Chops
- Preheat an indoor grill pan to medium heat.
- Grill pork chops 4–5 minutes per side, or until an instant-read thermometer reads 145°F at the thickest part.
- Rest chops for 5 minutes before serving.
- Serve
- Top pork chops with apple-mango chutney and garnish with fresh parsley.
